How does OP3 work?
It dramatically extends the shelf life by retarding enzymic reactions and preventing moisture loss by inhibiting respiration and oxidisation.
What is OP3 and is it safe and legal?
OP3 is a blend of organic acids, of which all are passed by The Soil Association, The Food Standards Agency and all other relevant UK and European bodies for use on all fresh produce.
Which produce can be treated with OP3?
Ideal for treating prepared fruits, and peeled potato products that are required to be free from sulphites e.g. organic potatoes.
How is OP3 used?
OP3 should be mixed with fresh cold water and the products to be treated should be submersed in it for approximately 30 seconds. It can be used in small tanks for batch dipping or it can be used in mechanical systems such as flume washers etc.
Does OP3 have to be declared on packaging?
OP3 is HYGROSCOPIC which means it works immediately on contact with the product and then naturally dissipates soon after. It is a processing aid and there are no labelling requirements on packaging.
How much do I use?
This depends on the produce to be treated and how much the shelf life is to be extended by. Usually it is recommended for use at between 2% - 5% concentration.
How to measure the concentration of the treatment solution.
The concentration can be measured manually with an electronic meter.
Does OP3 have any adverse reactions on treated produce?
OP3 leaves no taste, no odour and does not effect the colour or texture in anyway.
